Kevin Hambly's Tomato Cream Sauce Pasta

TOMATO CREAM SAUSE PASTA
TOMATO CREAM SAUSE PASTA
yellow onion
1 Jar Sun-dried tomatoes in oil
1 garlic clove minced
1 tablespoon of Basil
1 Can of San Marzano tomatoes
1 cup of good red wine
1 teaspoon red pepper flakes (more if you like it spicier)
Salt and pepper to taste
Cup of grated Parmesan
1lb Penne Pasta
Directions
Boil pot of water - add salt liberally
Heat sauce pan
Once heated add oil from sundried tomatoes
Add onions once oil is smoking and season with salt and pepper
Once onion start to turn opaque add garlic, basil let sit for 2 minutes
Add wine to deglaze pan
Add can of tomatoes
Salt and pepper to taste
Simmer 10-15 minutes
Add pasta to water
Once finished toss pasta with sauce and let simmer for 1-2 minutes
Just before service add Parmesan
