Dinner & A Movie - Gourmet Grilled Cheese

Gourmet Grilled Cheese
Ingredients
1 cup pesto
16 slices multigrain bread
cup Mayonnaise
cup parmesan cheese, shredded
lb provolone cheese, sliced
lb smoked gouda, sliced
3 tomatoes
 
Directions
Heat Panini press or pan. 
Spread a thin layer of pesto sauce onto 1 side of one piece of bread.  Spread a thin layer of mayonnaise onto the other piece of bread.  Sprinkle parmesan cheese over the pesto.  Layer one slice each of provolone and smoked gouda. 
Top with two slices of tomato and the other slice of bread. 
Grill until golden brown.
Makes 8 sandwiches
