The Not Just for Breakfast Pizza
1 pkg. Simply Potatoes Shredded Hash Browns
or about 3 c. fresh potatoes shredded and patted dry
2 eggs, beaten
Salt and pepper to taste
1 - 3oz. pkg. Oscar Mayer Real Bacon bits
c. fresh mushrooms sliced
c. green onions, sliced
c. green or red peppers, chopped
2 c. shredded cheddar cheese
Preheat oven to 450*F
Cover a 15" round baking stone with parchment paper.
For crust, combine potatoes,eggs, salt and pepper in bowl; mix well. Spread potato mixture into a 14" circle on prepared stone, pat down w/ back of spoon. Bake 20 minutes; remove from oven.
For egg topping, whisk eggs and milk in a 2 qt. microwave safe bowl. Microwave on HIGH 2 minutes; stir and microwave an additional 2 minutes; stir. Spread cooked eggs evenly over hash brown crust; top with your favorite ingredients. Sprinkle with cheese and bake an additional 10 minutes.
To serve, cut w/ pizza cutter.
