What's For Dinner? Turkey-Day Leftovers Part 2

Leftover Deviled Egg Salad

Place deviled eggs * into egg slicer.  Slice up eggs into pieces.  You could also use fork to mash them but an egg slicer makes them more presentable.

Salt and pepper according to your likeness and serve on lettuce leaf with crackers on bread or toasted bread as a sandwich.

 *My Filling for deviled eggs.....

 Mash hard boiled egg yolks with fork until fine as sand.  To this add:

Finely finely chopped onion (maybe cup)

1 tsp minced garlic

Sweet pickle juice (maybe 2 T )

3T finely chopped sweet gerkins

cup Hellmann's mayo (adjust to your likeness)

Salt and pepper

Mix altogether and place into wells of egg halves

Leftover Mashed Potatoes Patties

Mix into your mashed potatoes 

1-2 beaten eggs

Salt and Pepper

Optional:

Chopped onion and or chopped green pepper

 

Form into patties.

Fry in saut pan in Pam spray, butter or EVOO 3-5 mins.

Flip and brown on both sides.



Turkey Salad with Green Grapes

(Tweaked from the recipe of the mother of Larry Gilbert)

 

3-4 cups chopped turkey (breast, dark or both)

-1  cup Hellmann's mayo

minced onion

tsp minced garlic

3-4 ribs minced celery

cup minced sweet pickle, optional

1 cup green grapes, sliced in halves

(You may also tweak to your desires: craisins, dried cherries, blueberries, pecans, walnuts etc.)
