What's For Dinner? Turkey-Day Leftovers Part 1

Cranberry Chili Meatballs 

Home made meatballs or one 26 oz bag of frozen meatballs

2 cans of jellied cranberry sauce

1 bottle of chili sauce

cup of brown sugar 

Place meatballs into a non-covered casserole dish or a baking pan. 

Bake meatballs at 350until brown.  Drain off grease. 

Combine cranberry sauce, chili sauce and brown sugar in

sauce pan.  (I like to use mixer or emersion mixer aka boat motor- until smooth).  

Heat until simmering. 
Pour sauce over meatballs and cover with lid or tin foil.  Return to oven and continue baking at 300 for 1-2 hours depending on how thickened you like your sauce.  Stir every 20 mins.

Serve as appetizer or place in bun and make a meal

Day After Turkey and Noodles

3-4 cups cubed turkey (dark and/or white) - (can sub chicken for turkey)

Noodles (dry, bagged, boxed, frozen or fresh)

Turkey stock or chicken stock

sauted chopped onion or 3 T dried minced onion

OR 1 tsp dry granulated onion (I do not like onion powder)

Leftover gravy from Turkey day

1 can cream of mushroom soup

If no gravy was leftover then add:  1 can of cream of celery soup

Salt and Pepper

At this point you can add other things you like : chopped celery, green pepper, mushrooms, cheese, etc. 

 

Cut up leftover turkey. Set aside. 

Boil noodles according to the type that you are preparing in boiling turkey stock.  I do not like to boil my pasta in water as water has no flavor.  Stock adds flavor and color to the pasta. Drain when al dente. Add to cubed turkey.  Add remaining ingredients.

Depending on how creamy and soupy you like you casserole, adjust accordingly with the amounts of gravy and cream soups you add.  Some might like it drier and some might like it creamier. You can also add a splash of milk or cream for extra creaminess. Remember that when you heat this or bake it, some of the soups will be absorbed into the noodles.

You can reheat on top of stove in a sauce pan or you can place into a casserole dish and bake for 15-20 mins @ 350.  You can also sprinkle cheese or parmesan and crushed Ritz crackers on top the last 5-10 mins until golden brown.  Use your imagination.  Enjoy !

Grilled Turkey Reuben

I have tweaked it to my liking....  You may tweak it and make it your own version...

Ingredients

  • 2 tablespoons plus 1/3 cup butter, softened
  • One 10-ounce package coleslaw
  • tsp celery seed
  • 1 tablespoon distilled white vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar, optional
  • 1/4 teaspoon ground black pepper or white pepper
  • 8 slices marble rye bread
  • Thousand Island salad dressing or honey mustard mayo
  • 3/4 pound thinly sliced deli turkey or leftover TDay turkey
  • Cranberry sauce or jellied sa
