Dinner and a Movie: Greek Chicken Pita

They're sharing a fresh and simple recipe perfect for any dinner of of the week.
Greek Chicken Pita
Chicken Marinade:
5 boneless chicken breasts
1 oz olive oil
1 oz lemon juice
1 tbsp garlic chopped
1 tsp dried oregano
1 tsp salt
tsp pepper
Sauce
5.5 oz sour cream
oz lemon juice
1 tsp garlic chopped
1 tsp parsley, fresh, chopped
tsp salt
1/8 tsp white pepper
cucumber, peeled and seeded
Garnish
10 slices tomato
10 oz black olives, sliced
10 oz red onion, sliced
1 lb cucumber, peeled, seeded, diced
5 oz romaine lettuce
5 each pita bread
Instructions
Day Before:
Marinate chicken in oil, lemon juice, garlic, oregano, salt and pepper.
Make sauce:
Peel and seed cucumber. Puree in food processor or blender
Mix together sour cream, lemon juice, garlic, parsley, salt, pepper and cucumber.
Day Of:
Grill chicken then bake in oven until 165 degrees is reached. About 5 minutes. Cool.
Assemble pita:
Lay pita on a thin bed of chopped romaine in the base of a plate
Spread 1 ounce of sauce in center of pita. Add 2 slices of tomato, 2 oz of cucumber, 1 oz red onion and 1 oz black olives.
Top with 1 sliced chicken breast.
Garnish with more parsley.
Serve warm or chilled
