Food Facts: Powerful Pancakes

Breakfast is the most important meal of the day and getting off to a good start could be as easy as remaking a popular breakfast dish- the pancake.

Maura Kennedy from Christie Clinic's Transformations Weight Loss Program shows us how.

Blueberry Pancakes

These are a great high-protein start to any day!

Ingredients:

2 cups frozen blueberries

cup water

cup Truvia/Splenda

1 cup plain Greek yogurt

1 cup low-fat cottage cheese

3 eggs

Juice from 1 lemon

1 cup white whole-wheat flour

teaspoon baking soda

Pinch of salt

 

Directions:

Mix blueberries, water, and Truvia in saucepan. Cook over low heat, stirring often,

for 10 minutes or until the blueberries begin to break apart.

 

Whisk together yogurt, cottage cheese, eggs, and lemon juice in a bowl. Mix flour, baking soda, and salt in another bowl. Add flour mixture to yogurt mixture and stir (just until blended).

 

Heat skillet or saut pan over medium-low heat. Coat with non-stick cooking spray and add batter in large spoonfuls, about cup each. Flip when tops begin to bubble, about 3-5 minutes. Cook second side until browned. Serve with warm blueberries on top.
