Turkey Leftovers from Anne`s Mom

Turkey Enchiladas 3 cups cooked turkey 4-5 oz sour cream 12 corn tortillas 3 cups grated cheese (Mexican blend) (2) 10 oz cans green enchilada sauce 1 can diced olives 1 green pepper additional sour cream Mix turkey, shredded into strips, with sour cream. Warm tortillas (3 at a time in microwave.) Then place spoon of turkey mixture and spoon of cheese into tortilla and roll. Place in greased 9 x 13 pan. Repeat this until you have 12 completed. Then top with enchilada sauce and 1 1/2 cups of remaining cheese. To complete add sliced black olives and green pepper slices over the top and bake at 350 degrees for 30 minutes. Serve hot, with spoon of sour cream. First Lady Betty Ford`s "Baked Turkey Casserole" 4T unsalted butter 2 medium or 1 large green pepper cut in strips 6T Wondra flour 3 cups hot chicken stock 3 cups cooked turkey, cut in strips 1T chopped parsley 1 tsp. sage 1 tsp. oregano 1 tsp. thyme 1/2 tsp. Worcestershire 1/4 tsp. ground white pepper salt to taste 1 cup milk or heavy cream 10 oz. angel hair pasta 6T shredded parmesan cheese 1/2 cup bread crumbs Optional ingredients: diced artichokes mushrooms frozen peas white wine Melt butter in stock pot; add green pepper and simmer covered for 5 minutes. Add flour and stir well. Add chicken stock and bring sauce to a boil. Cook sauce 5 minutes, or until smooth. Add turkey and seasonings. Bring to a second boil and add milk gradually, while gently stirring. Simmer for 5 minutes. Cook pasta for 7 minutes and drain. DO NOT RINSE PASTA. Place noodles in a greased 9 x 13 baking dish. Top with turkey mixture. Sprinkle with cheese and bread crumbs. Bake in 375 degree oven for 25 - 30 minutes, or until lightly browned.
