St. Patricks Day Fun Recipes Shamrock Milk Mixer 1 cup milk 2 tablespoons Pistachio flavor instant pudding ½ crushed chocolate mint sandwich cookie Pour milk into a tall glass. Add instant pudding and stir with a fork to dissolve. Stir in cookie. Makes 1 serving. Quick Tip: Crush the cookie by placing in a small plastic bag and crush using a rolling pin or with your hands. Reuben Salad Salad: 3 cups thinly cut lettuce 1 pound sauerkraut, drained 4 ounces corned beef, cut into strips 1/3 cup chopped dill pickles ¼ cup sliced green onions 1 1/2 cups (6 ounces) Swiss cheese, cut into cubes or strips 2 slices rye bread, toasted and cubed Dressing: 1 cup sour cream ¼ cup chili sauce ½ teaspoon dill weed Salad: Set aside one cup lettuce. Layer ingredients in order given (lettuce, sauerkraut, corned beef, dill pickles, green onion, Swiss cheese, and rye bread cubes) into a bowl. Top with the one cup lettuce. Cover salad with plastic wrap and refrigerate. Just before serving, spread dressing on salad, toss, and serve. Dressing: Mix sour cream, chili sauce, and dill weed. Cover and chill until needed. Flavor is better if dressing is refrigerated for at least four hours. (Chill dressing and salad separately). Makes 6-8 servings.
