Serves 4
For the Vegetables
2 carrots, julienne
2 Zuchinni,julienne
2 Yellow squash julienne
1 red bell pepper, sliced
2 oz light soy sauce
1 tsp ginger, grated
1 tsp Sesame oil
1Tb vegetable oil
1.In a hot wok add the oils and heat till smoking
2.Add the veg and toss quickly to cook.
3.Add ginger and soy and toss again...total cook time about 30-40 seconds.
4.Remove and hold warm.
For the Pineapple Salsa
1 Ea. Pineapple, Peel, core and dice
2 Ea. Poblano Pepper, seeded and Diced
3 Ea. Red Bell Pepper, seeded and diced
4 Ea. Red Onion, diced
3 Ea. Limes
1 Bunch
