ORANGE MUFFIN*Cut a lid off the orange and take out the center meat (save this to make juice). Mix a muffin mix according to directions on the package only use a plastic bag to mix in rather than a bowl. Pour muffin mix into the hollowed out orange until it is about half full and replace the lid. Wrap with tin foil. Place in hot coals and cook for 20 minutes. Remove from coals and let cool. When cool peel orange off muffin.
BOATIN` HILLBILLY TRASH BREAKFAST*Take an aluminum foil cooking bag sprayed with cooking spray, sprinkle with seasoning salt and put some pats of butter in the foil bag. Open a bag of shredded hash browns, beat 6 eggs, chop 1 medium onion, 2 cups of shredded sharp cheese and bell pepper. Pour all ingredients in to the bag of hash browns, and mix by squeezing. Pour the mixture into the foil cooking bag and spread out. Add some salt and pepper, more seasoning salt, and a bit more butter on top of the hash brown mixture. Place the aluminum cooking bag on a preheated grill (medium heat) and turn the bag every 5 minutes. The bag will start to puff and you can open it to check for doneness. Serves 6. Preparation time about 30 minutes.
