½ gallon vanilla ice cream
4 ½ tablespoons package strawberry gelatin powder or another flavor
3 tablespoons package berry-blue gelatin powder or another flavor
Let ice cream set out at room temperature until soft - about 20-30 minutes. (Note: If its a very hot day, let it soften in the refrigerator. It will take a little longer, but the softening will be more even.)
Sprinkle 1 ½ tablespoons red gelatin powder in the bottom of a medium-size plastic container. Layer one-fourth the ice cream over the mix. Sprinkle with 1 ½ tablespoons blue gelatin powder. Add two more layers, alternating red and blue color. Top the final layer with 1 ½ tablespoons gelatin powder. Cover and freeze until it hardens, about 3 to 4 hours. Scoop a serving into a bowl, top with fresh fruit (raspberries, blueberries, sliced strawberries, melon balls and/or sliced peaches), grab a spoon and enjoy!
