Sugar-Free Holiday Nog

As shared by Donna Falconnier from U of I Extension on "The Morning Show." INGREDIENTS 7 cups skim milk, divided 1 package (1 ounce) instant sugar-free vanilla pudding mix 1 to 2 teaspoons vanilla extract or rum extract Sugar substitute equal to 4 to 8 teaspoons sugar 1 cup evaporated skim milk DIRECTIONS Combine 2 cups milk, pudding mix, vanilla and sugar substitute in a bowl; mix according to pudding directions. Pour into a ½ gallon container with a tight-fitting lid. Add 3 cups milk; shake well. Add evaporated milk and shake. Add remaining milk; shake well. Chill. Yield: 8 servings. Nutrition information: One serving (1 cup) equals 114 calories, 296 mg sodium, 6 mg cholesterol, 18 g carbohydrate, 10 g protein, 1 g fat, 0 g fiber. 19 NOV 04 mrm
