Roasted Tomato Soup
Recipe shared by Bob Rowe of Classic Events Catering on "The Morning Show."
INGREDIENTS
18 Roma Tomatoes cut in Half
1 Cup Chopped Onion
3 Cloves of Roasted Garlic
1 ½ Tablespoons of Sugar
1 ½ Tablespoons of Dried Oregano
4 Cups Chicken Stock
1 Cup Heavy Cream
Salt & Pepper
Olive Oil
DIRECTIONS
Preheat oven to 350 degrees.
Place the tomatoes on a cookie sheet, cut side up, and drizzle with olive oil.
Sprinkle the tomatoes with salt and pepper.
Place the tomatoes in the oven at 350 degrees for 50 minutes.
Sautee the onion is a sautee pan until it begins to become translucent.
Add the garlic, sugar and oregano to the onion and sautee for 5 minutes.
Add the tomatoes to the onion mixture and sautee for another 5 minutes.
In a blender, puree the tomato and onion mixture with the chicken stock and heavy cream in batches.
