Asparagus Soup

Asparagus Soup Recipe shared by Bob Rowe of Classic Events Catering on "The Morning Show." INGREDIENTS 2 Tablespoons of Butter 1 Cup Chopped Onion 2 Cloves of Garlic ¼ Cup of White Wine 2 Cups Chicken Stock 3 Cups Whole Milk Salt and Pepper 3 Bunches of Asparagus DIRECTIONS Remove the tips from the asparagus and reserve (we will use the tips later in the recipe). Remove the bottoms of the asparagus and discard them In a soup pot, melt the butter and add the chopped onion. When the onion starts to become translucent add the garlic, salt and pepper. Add the white wine and asparagus stems (not the tips) to the onion and sautee for 5 minutes. Add the chicken stock and whole milk to the soup pot and heat slowly. Add the asparagus tips to the pot before serving. 12 NOV 04 mrm
