Great Grilled Sandwiches

As shared by Mary Minneci of Minneci`s Restaurant in Champaign on "The Morning Show." These awesome grilled sandwiches are a great way to get your meat, vegetables, cheese and bread. I usually have some personal favorites that I particularly enjoy putting together. This week at Minneci we are featuring the grilled capocollo, provolone and spinach. This particular capocollo that we use is a bit spicy, the spinach and the cheese cut the spice and gives it a wonderful flavor. We have also done ham, broccoli and cheddar or Swiss. Turkey, asparagus and Swiss or cheddar. Red and green bell peppers with sausage and provolone cheese. The vegetables that I use in these wonderful grilled sandwiches are usually cooked first to bring out the best flavor. Depending on what vegetable I`m using I decide which method of cooking I wish to use to what I believe gives that vegetable the best flavor for a sandwich and the meat that I choose to use. These are vegetables that I love using on sandwiches and are simple vegetables that your viewers would probably have in their refrigerators. broccoli spinach bell peppers zucchini asparagus spinach Meats Include Turkey Hams (including prosciutto and capocollo) roast beef chicken sausage Cheeses that we like using at the restaurant provolone mozzarella cheddar Swiss of course any sliced cheese can be used and even such cheeses as gorgonzola or blue cheese The most popular bread that we use at the restaurant for these sandwiches is our Italian bread that we get daily from an Italian bakery in Chicago and we slice ourselves. Other breads that we carry from the same bakery is a wonderful whole wheat, sour dough or rye. We do make the grilled sandwiches on those breads if a customer makes that request. I also like mixing different cheeses and different meat combinations for example; A grilled sandwich with ham, turkey, Swiss, cheddar and pick a vegetable, any of the above vegetables would be great and each vegetable would bring a different flavor to the sandwich. Your viewers can use deli meats that they probably have in their refrigerator or maybe they have grilled chicken from last night`s dinner and had a few leftover pieces or even a grilled or a baked fish would be great. Grab a vegetable, grab any cheese out of the fridge melt it all together and you have got a great sandwich and your veggies too!!! 1 OCT 04 mrm
