Roasted Vegetable and Focaccia Sandwich

This great summer grilling recipe is sure to tantalize your taste buds. As shared by Kristina Adams of the Carle Weight Management Clinic. Ingredients: 1 (16 oz) round focaccia bread ¼ cup goat cheese (plain or basil flavored) ¼ cup basil pesto 1 small eggplant (sliced and quartered) 2 portabella mushrooms (sliced) 1 yellow squash (sliced) 2 red peppers (sliced) 1-2 Tbsp.
