Coriander and Sesame Seed-Encrusted Tuna

Ingredients 6oz tuna 1T white sesame seeds 1T black sesame seeds 1T coriander seeds 1 box couscous 1T chopped fresh chives 1T chopped fresh basil 1/2c. spring mix shiratza ginger vinaigrette wasabi truffle oil (above four ingredients available at Euro-Mart) Method Roll fish in coriander and sesame seeds. Heat skillet and oil until smoking then sear tuna on each side until golden-about 1 1/2 minutes per side. Mix equal parts cous cous and hot water, add herbs. Toss spring mix with vinaigrette. Place couscous on plate, place greens on top couscous and tuna on top of all, surround with shratza, wasabi and tuffle oil. 1 JUL 04 mrm
