Fresh Salmon Cakes with Fresh Corn

As shared by Bob Rowe of Classic Events Catering on "The Morning Show." 16 oz. fresh salmon, chopped fine 1/2 c. green onion, chopped 1/2 c. celery, finely chopped 1/2 c. mayo 1/2 c. Saltine cracker crumbs 1 egg 1 tsp. salt 1 tsp. white pepper dash Tabasco 1/2 c. (about one ear) sweet corn, blanched Mix well and place scoop full onto hot greased griddle (350 degrees) or frying pan on medium heat. Cook for three minutes on each side. Sauce 1/2 c. Creole mustard 1/2 c. mayo 2 roasted red bell peppers, skinned and seeded 3 JUNE 2004 mrm
