Mixed-Apple Salad over Greens

As prepared by Jennifer DeHoog of the St. Louis Dairy Council on "The Morning Show." DRESSING INGREDIENTS 1/4 c. fresh lemon juice 2 tbsp. honey 1 tsp. olive oil 1/4 tsp. salt 1/4 tsp. freshly ground pepper DRESSING DIRECTIONS Combine first five ingredients in a small bowl, stirring well with a whisk. SALAD INGREDIENTS 4 c. chopped apples: Granny Smith, Cameo, or Braeburn 1/4 c. (1 ounce) crumbled Feta or Bleu cheese 2 bacon slices, cooked and crumbled 4 c. mixed salad greens Crackers SALAD DIRECTIONS Combine apples, cheese, bacon. Drizzle dressing over apple mixture; toss gently to coat. Serve over greens with crackers. Makes 4 servings; Serving Size: about 1 cup apple mixture and 1 cup greens
