Recipe shared by Bob Rowe of Classic Events Catering on "The Morning Show."
For the pancakes:
1/3 cup milk
2 eggs
1 cup flour
1 teaspoon black pepper
½ teaspoon salt
½ teaspoon paprika
2 teaspoons sugar
2 cups fresh sweet corn
½ red bell pepper diced
½ green bell pepper diced
¼ cup chopped cilantro
¼ cup shopped parsley
3 dashes of Tabasco sauce
juice of one lime
In one bowl mix the milk and eggs until well blended.
In another bowl, mix the flour, black pepper, salt, paprika & sugar.
In a third bowl, mix the sweet corn, bell peppers, green onion, cilantro, parsley, Tabasco & lime juice.
Combine the egg & milk mixture with the flour mixture until blended and fold that into the sweet corn and bell pepper mixture.
Grill the batter on a flat grill preheated to 350 degrees for 3-5 minutes or until golden.
For the salsa:
2 avocados, peeled and diced
juice of two limes
3 tablespoons cilantro
salt & pepper to taste
¼ cup chopped green onion
Toss the ingredients for the salsa together and serve alongside the sweet corn pancakes.
