Couscous Salad

Recipe shared by Bob Rowe of Classic Events Catering on "The Morning Show." INGREDIENTS 1 cup diced tomato 1 cup chopped green onion ¼ cup parsley ¼ cup chopped basil ¼ cup olive oil 1/3 cup balsamic vinegar 10 oz couscous crumbled feta calamata olives salt & pepper DIRECTIONS Cook 10 oz of coucous and let it stand. After a few minutes, fluff the couscous with a fork. Stir in the tomato, green onion, parsley & basil. Add the olive oil and balsamic vinegar and toss the mixture. Add salt and pepper to taste. Top with the calamata olives and feta and serve. Classic Events Catering: 367-7118
