Grandma`s Swedish Pancakes with Mandarin Orange Sauce

Dish prepared by Erin Sloan and Jim Painter, PhD, from the Food Science and Human Nutrition Department at the University of Illinois on "The Morning Show." ***PANCAKES*** INGREDIENTS 3 eggs 4 T sugar 1 Cup heavy whipping cream 4 T flour ¼ pound butter DIRECTIONS Beat 3 eggs whites w/ 4 T of Sugar until pale and light. Add 1 cup of heavy whipping cream alternately with 4 heaping T of flour. Beat well after each addition. Stir in ¼ pound of melted cooled butter. Mix Well. Place on skillet and cook until light brown in color. ***MANDARIN ORANGE SAUCE*** 1/3 cup sugar 2 T corn starch 1 10 oz. can mandarin oranges ½ cup orange juice DIRECTIONS Mix sugar and corn starch in sauce pan. Drain juice from oranges in a one cup measuring cup then add orange juice to make one cup. Stir juice mixture into sauce pan until smooth. Heat to boiling, stirring constantly, until thickened.
