As prepared on "The Morning Show" by Chris Cutler, dietician with Decatur Memorial Hospital, for the Taste of Decatur.
INGREDIENTS
1 16oz. box soy pasta*
1/4 c. chopped green onion
1/2 c. diced cucumber
1/2 c. diced celery
1/2 c. shredded carrot
1 c. diced tomatoes
3 c. Italian dressing**
*Penne or rotini recommended; any pasta will work
**U of I French Dressing recommended (see separate recipe)
DIRECTIONS
Cook pasta as per package directions; drain, rinse, cool.
Toss cool pasta with remaining ingredients.
Toss with dressing.
Cover and chill.
