Crab Cakes

3 6.5 oz cans of pasteurized crab (drained) 1 cup saltine cracker crumbs 1/2 cup mayonnaise 2 eggs salt and petter 3 Tb creole mustard 2 dashes Worcostershire 3 dashes Tabasco 2 Tb chopped red onion 2 Tb chopped parsley 2 Tb chopped red bell pepper 2 Tb chopped scallion Mix well and refrigerate for 20 minutes, form mixture into balls and place on a preheated 375 degree griddle, after a minute flip balls, then flatten into patties or "cakes". Grill three minutes each side. Makes 15 3" cakes.
