Updated: January 7, 2009
As prepared by Jonathan Weisbach with the University of Illinois Food Science and Human Nutrition program on "The Morning Show." Latkes can be made with several popular pre-mixed box recipes or from scratch. Here`s a "from scratch" recipe we found. INGREDIENTS 2 cups peeled and shredded potatoes 1 tablespoon grated onion 3 eggs 2 tablespoons all-purpose flour 1 1/2 teaspoons salt 1/2 cup peanut oil DIRECTIONS +Place potatoes in a cheesecloth; wring; remove moisture +Beat eggs +In a medium bowl, stir the potatoes, onion, eggs, flour and salt +In a large heavy-bottomed skillet, heat oil until hot +Place large spoonfuls of potato mixture into the hot oil +Press down on potatoes to form 1/4 to 1/2 inch thick patties +Brown on one side, turn and brown on the other +Remove potatoes, drain on paper towels Serve hot! OPTION Serve with applesauce, sour cream, syrup, or jelly For more about the Food Science and Human Nutrition Department at UIUC, log onto their website:
