Potato Latkes

As prepared by Jonathan Weisbach with the University of Illinois Food Science and Human Nutrition program on "The Morning Show." Latkes can be made with several popular pre-mixed box recipes or from scratch. Here`s a "from scratch" recipe we found. INGREDIENTS 2 cups peeled and shredded potatoes 1 tablespoon grated onion 3 eggs 2 tablespoons all-purpose flour 1 1/2 teaspoons salt 1/2 cup peanut oil DIRECTIONS +Place potatoes in a cheesecloth; wring; remove moisture +Beat eggs +In a medium bowl, stir the potatoes, onion, eggs, flour and salt +In a large heavy-bottomed skillet, heat oil until hot +Place large spoonfuls of potato mixture into the hot oil +Press down on potatoes to form 1/4 to 1/2 inch thick patties +Brown on one side, turn and brown on the other +Remove potatoes, drain on paper towels Serve hot!
