Clay Evers - Bacon Brownie Guy

Pineapple Surprise with Bacon (adapted from Phyllis Haddick's recipe)...Phyllis is my cousin and a wonderful lady.
4-5 cups of bread cut into cubes
2 cups sugar
3 eggs (beaten)
1 cup milk
1 cup melted butter
1 can pineapple tidbits (drained)
1 cup of bacon bits
Stir all together and pour into casserole dish.
Bake in 325 degree oven for 45 minutes.
Can be made without the bacon and is very good. However, like most all things, it is better with bacon.
Clay's not so Parma Bacon treats (alteration of Aunt Jane Fletcher's Parmesan treats)...Jane is my Dad's sister and a brilliant woman.
1/2 cup yellow onion
1/2 cup softened butter
2 tablespoons brown mustard
1/2 cup mozzarella
1/4 cup romano
1/4 cup parmesan
7.25 oz of canned tomatoes=1/2 can (well drained)
1/2 cup crackers
Put the above in a food processor and blend until smooth.
Spread on sliced bread of choice and top with bacon bits.
Bake until cheese starts to bubble and serve.
This recipe can be made without bacon and it is good. Make them both and see which ones go first. I can tell you it is not a fair fight. The ones with the bacon win in the first round. Fast, simple, not expensive, and a crowd pleaser.
